Believe it or not the little holes you see in crackers do serve a purpose.
they are called docking holes. They are what stops the dough from expanding into bubbles during the baking process. There is a machine called a “docker” that pricks the holes in the dough and allows the air to escape so that the cracker can bake properly. This is a good thing because it’s what makes sure your crackers are flat and crispy.
