Olives are usually a love or hate type of food. I happen to LOVE them. Especially the green kind. But I’ve always wondered how they get that red pimento in there?
Up until the 1960s the pimentos were actually stuffed into the olives by hand! Crazy right? Now technology has improved so much that there is a special olive machine made in Spain that removes the olive pit, inserts the pimento, and makes that famous X shaped deign on the bottom. Pretty neat!
Now, if it’s the weekend and I’m making some dirty martini’s I will be removing those pimentos myself and hand inserting some blue cheese. Yum.
