SWEET POTATOES

Ingredients:
3 lbs of sweet potatoes or yams
brown sugar, 3/4 cup
walnuts 8oz bag
orange juice, 1/2 cup
salt and pepper
cinnamon, 1 tsp.
maple syrup, 4 tablespoons
Preparation:
Bake the yams or sweet potato until done, remove the skins and cool.
In a mixing bowl mash the potatoes, add the orange juice, brown sugar and cinnamon and placed the potatoes in a buttered baking dish, salt and pepper to taste and 2 tablespoons of the maple syrup.
In a smaller bowl add the brown sugar, cinnamon, and walnuts, reserve about 1/3 of all the listed ingredients for the topping.
Sprinkle the topping and dot with butter.
Bake for 45 minutes at 350
Enjoy HOT or at room temperature
